Winemaker: Dominique Gruhier — a key figure in reviving the historic vineyards of Épineuil. Works organically with low-intervention methods, native yeasts, and minimal sulphur to highlight purity and terroir.
Winemaking: Long, gentle pressing. Spontaneous fermentation in stainless steel and large 400–600L oak barrels (demi-muids). Aged 8 months on fine lees before disgorgement. Organic; 12% ABV.
Name Meaning: “Crémant de Bourgogne” is the region’s traditional-method sparkling wine designation — Burgundy’s answer to Champagne, with a slightly softer, more fruit-forward style.
Interesting Fact: The vines grow on classic Kimmeridgian limestone packed with ancient oyster fossils — the same geology that defines Chablis and gives tension and precision to the wine.
Serve With: Ideal aperitif; also great with seafood (scallops carpaccio, oysters), grilled salmon, soft cheeses, or anything calling for bright, refined bubbles.
