Winemaker(s): Matt Gregory — former wine merchant turned minimal-intervention English winemaker, working organically with a soil-first ethos and a converted stable block for a cellar.
Winemaking: Carbonic maceration for 10 days, basket-pressed, natural Pied de Cuve fermentation, blended with reserved juice at bottling to create gentle sparkle. Unfined, unfiltered, zero added sulphur.
Name Meaning: “Ancestral” refers to the ancestral/pét-nat method — bottling before fermentation finishes to create natural bubbles.
