Name Meaning: “Blanc de Noirs” means “white from black,” referencing white sparkling wine made from dark-skinned grapes. “Saddle Goose” is an old English term for a fool — a tongue-in-cheek nod to how audacious (even foolish) it seemed to make natural-leaning, experimental English wine when the project began.
