Winemaker(s): Les Indigènes — a collective of small organic estates between Corbières and Limoux, committed to sustainability, biodiversity and minimal-intervention winemaking. Their philosophy emphasises native yeasts, no added sulphur and letting the terroir and grape speak without unnecessary manipulation.

Winemaking: 100% Cinsault from young vines on red sandstone soils. Fermented with indigenous yeasts, no added sulphur, no oak, and bottled light and fresh. The result: an honest, direct red — vivid fruit, floral brightness and easy drinkability.

Name Meaning: “Toujours” means “always” — a subtle assertion of continuity and consistency: a wine always true to its roots, always natural, and always faithful to the land and grape.

Interesting Fact: At only ~12 % ABV and with soft tannins, Toujours offers a “red-wine for every mood” charm — a rare lightly-framed French red that pairs as easily with picnic fare as it does with dinner.

Serve With: Light Mediterranean dishes — tomato salads, grilled vegetables, goat’s cheese, cold meats, summer pasta, or ease into it chilled on a warm evening.
