Winemaker(s): Tillingham — pioneers of England’s natural-leaning wine movement, farming a mixed agricultural estate with a focus on biodiversity, low intervention and experimental but precise cellar work.
Winemaking: All five varieties grown on the estate and picked on the same day; direct pressed. Fermented and aged four months in Stockinger puncheon, then six months in stainless steel. Bottled by gravity with minimal sulphur. Only 1,760 bottles made.
Name Meaning: “Field Blend” refers to multiple varieties grown, harvested and pressed together — a traditional European approach revived by Tillingham for texture and harmony.
Interesting Fact: Despite including red grapes, the wine is made as a white — an old-world technique that adds aromatic complexity and subtle savouriness.
Serve With: Roast chicken, charred leeks, creamy pasta, soft cheeses or dishes with gentle spice.
